Aglio, Olio e Peperoncino – The 10 minute Pasta!
Aglio, Olio e Peperoncino
This is simplicity to the MAX! A 10 Minute Pasta from Start to Served. This is a simple traditional pasta that is thrown together in the time it takes to boil the pasta. For most pasta, under 10 minutes and will easily feed 4 people.
Ingredients you will need:
3 Whole Fresh garlic cloves – pressed under the broad side of a knife and chopped into several large pieces.
2 Chopped Fresh Red Chili peppers OR 4 Dried and chopped Peperoncino peppers.
2 Tbs Bread Crumbs
1 Pack of Garofalo Spaghetti 500g (16.8 Oz) – Allow 75g – 100g per person
Take a medium to large stock pot and fill 2/3 rds with water, and place on the biggest burner at full. Place the lid on, to assist with bringing to a boil. Add 2 Tbs of coarse Sea Salt to the water and allow to come to a boil. Meanwhile…
In a large skillet add The Copper Olive™ Private Stock Extra Virgin Olive Oil along with the Chopped Chili and Garlic, and allow the garlic to begin to lightly brown, continually stirring, once the garlic is lightly golden brown, add about 2 Tbs of Bread crumbs and remove the skillet from the heat and set aside.
Once the water has come to a boil, add the Garofalo Spaghetti, allow the spaghetti to gently descend into the water, stir the spaghetti so that it will not stick together. Allow approx. 7 minutes cooking time, at the 5 minute mark spoon off 2 ladles worth of the boiling pasta water and set it aside. Around the 7 minute mark, take a strand of spaghetti from the water, being careful not to get burnt, and biting it we see the “Cottura” or how cooked the pasta is, at this point the pasta should be al’dente.
On low heat bring the skillet up to temperature while you strain the spaghetti in a colander, add the strained spaghetti to the skillet along with half of the pasta water that you set aside earlier, turn the heat up until the water, oil, garlic and chili mix begins to sizzle, while constantly tossing the pasta until all of the pasta is generously covered with the mix, if needed add small increments of pasta water to the skillet to help allow complete coverage of the pasta with the garlic, chili and oil mix.
Remove from heat, and serve with fresh parsley.
If needed serve with extra chili on the side.
