Around the 7 minute mark, take a strand of spaghetti from the water, being careful not to get burnt, and biting it we see the “Cottura” or how cooked the pasta is, at this point the pasta should be al’dente.
On low heat bring the skillet up to temperature while you strain the spaghetti in a colander, add the strained spaghetti to the skillet along with half of the pasta water that you set aside earlier, turn the heat up until the water, oil, garlic and chili mix begins to sizzle, while constantly tossing the pasta until all of the pasta is generously covered with the mix, if needed add small increments of pasta water to the skillet to help allow complete coverage of the pasta with the garlic, chili and oil mix.
Remove from heat, and serve with fresh parsley.
If needed serve with extra chili on the side.
